Walter - the guy in the middle here - is moving south, to Chincoteague Virginia. He'll be working with local chef Carlo Fernandes at The SeaShell Cafe down there. Walter started working with us soon after we opened last summer; he's a WashColl grad who is pretty excited to be getting out of Chestertown and out into the "real world". We wish him a lot of luck - he's been a terrific employee with a positive work ethic, great sense of humor, not to mention good tunes on his IPod! We are sure he will go far in the food world, and we refuse to say "Goodbye Forever"!
The other two young men are also cooks. Alec - on the left - opened with us last May as a dishwasher and moved into the Salad Cook position this past winter. He is graduating from High School in May and will be going to Art School. He has been a very strong contender for "Young Man of the Year" in our book and he'll be sorely missed when he leaves our kitchen. Isaac - on Walter's left - is the new(ish) sous-chef here at BT. He's an an alum of the Kennedyville Inn and has been here with us since Holly left. He is proving to be more than up to the job, with a high energy level and a genuine interest in learning new dishes and new techniques along the way.
Walter is being replaced by a young high school fellow who is in the culinary program there and wants to be a cook. How things have changed - to some degree - that a 17 year old aspires to be a cook, rather than just falls into it because it's the only job he could get. We also have a Chesapeake College culinary student employed on the weekends - both of these students will be getting quite an education right in our kitchen, and get paid for it to boot!
Meanwhile, when you go down to Chincoteague this summer, be sure to stop in at Walter's new digs and say hello! I know we will!
