Saturday Morning Musings

It's 9:30 on Saturday morning and I should be doing something constructive - like getting ready to have a really busy Brunch - but I'm not. We had probably one of our top 5 busiest nights last night and I am still recovering I guess. Some people in this business count their "busy-ness" in dollars and cents, but we count in the number of customers served, which relates more to how hard you worked, in my mind. Even if half of them have iced tea and small plates, they were waited on and cooked for just the same as the half that have bottles of wine and three courses, so cover counts count. And last night was a busy one, as was Thursday. Tonight will probably be relatively quiet, if our normal pattern is followed.

Customers these days are always asking me "How's business?". I understand their concerns about it - it's an unusual economy these days, after all. My response to this inquiry is "Fine". I tell them that I know we should actually be busier than we are. This is only our second year as The Brooks Tavern, and generally a business - one that is thriving that is - should grow a little each year, getting busier and busier as it grows older. But I don't think that will happen this year; our hopes are more to be able to meet the payroll, pay the rent, continue to purchase our goods and supplies C.O.D., and take pride in our product, which is Brooks Tavern. If we can do this, we will survive. We'll keep making mistakes, of course, but learning from them as well, always striving to improve as we go along. And if we get one or two super rockin' nights here and there, with plenty of customers who appreciate what we all are trying to do here - which is to make them happy - then we will have been successful. And that's what it's all about.
