Or maybe I should say "This Weekend's Veg". This is a large black bus tub full of summer...oops, I mean ratatouille. My job was to taste it, and I tasted a healthy plateful. The last weekend of August is a fitting time to serve this room temperature garnish of eggplant, red peppers, tomato, onion and zucchini, don't you think?
