Porchetta!



I was out running errands when the porchetta was being put together this morning, so I missed photographing the step-by-step process of getting to this point, but doesn't it look awesome?! Everyone is quite intrigued by the idea of pork cooked with a blanket of bacon... Now it will rest overnight, so the flavors of the herbs can meld with the pork, and tomorrow, into the oven!

And now Kevin wants to make pork belly confit - bacon cooked in pork fat...hmmm, and then you say you deep fry it???
