Tarragon Bonanza



My sister-in-law has grown the most incredible tarragon plant, and this afternoon I went over and cut the whole thing off.  Don't worry, there will be a second cutting - at least - and this first one will make the best vinegar for everything from salad dressings to potato salad to duck sauce.


I brought three gallons of rice vinegar to a steaming boil and poured it over the tarragon - at least over most of it, there's still enough for probably another gallon of vinegar.  We'll let it steep in the big black tub until it cools and then put it in gallon jugs for about two weeks, until it is ready to use.  This is what to do when life throws you a tarragon bonanza - make vinegar!
