This Week's Prix-Fixe

Last night's Wednesday special featured eggplant rollatini, filled with ricotta and mozzarella cheeses and scented with basil.  Redman basil and Redman eggplant.  It was delicious, and I think we might just see it as an entry into the vegetarian small plate category. 


The rollatini was followed by a juicy red wine braised duck leg.  Only the squash is local on this plate, (yes, that would be Redman); the big news is the return - at least on this item - of the mashed potatoes.  One of our major finds in NYC Monday was a huge potato masher, which I schlepped all over the city like it was a weapon, after we scored it at the Bowery Kitchen Supply in the Chelsea Market.  Kevin has been looking forever for a  potato masher sturdy enough for his use - he's been through about a half dozen.  He has never liked whipping potatoes in the big mixer, for reasons only Kevin can understand - mostly I think because they are so easy to over mash in that machine.


The latest masher, coming in at 19 inches and setting us back all of $14, may be the answer to his search.  Already it is a powerful force in the kitchen, as the photo below, of Anshuman holding the new tool reverently, demonstrates:
