Believe it or not, this is the new chicken dish on the dinner menu. Chicken and blue cheese wrapped in brick pastry and fried, served with spinach and a sweet potato mushroom ragout. So far, early returns are positive.
Chicken is one of the hardest menu items to be creative about, because it is something that most people are pretty handy with in their own kitchens. They can bake it, fry it, fricassee it them selves, any time of the week. Kevin's challenge is to come up with a presentation that an amateur cook would not attempt at home. And while this dish is by no means complicated, it is a little more involved than usual, with each element a cog in a wheel meant to come together deliciously.
