What A Week

It's been rather busy in the kitchen for Kevin this week, beginning first thing Tuesday morning, when three out of five of the day crew were not able to make it to work: Angie told us on Monday that she was going to the doctor about an eye problem which she feared was conjunctivitis (it wasn't, but it was a nasty infection); Brian called out soon after we arrived with a child issue; Mary actually showed up but had to leave with child issues of her own. Marlena, who was already scheduled to be out on Thursday and Friday, had her work cut out for her when she arrived.  And we were (once again) saved by Rodrigo, who came in to work the line with her, while Kevin handled the salad station.  Really, all we could do was laugh.  I told several tables about the shortage of labor during lunch, saying "Three out of Four cooks couldn't make it in today...wanna go in and see how Kevin is doing?!"  There wasn't much else to do, and as we know, these things happen, just not usually all in one day.  A busy Tuesday lunch follows.

So Wednesday.  Mary is still out and now LaVonte has child issues - no babysitter for his infant son.  Brian makes it in, as does Angie and Marlena, so we're not so bad. But a lunch without LaVonte is never a good thing.  If he had been out Tuesday, Kevin would probably have closed.  Anyway, a busy Wednesday lunch follows.

Thursday.  Mary tells us she is going to be out the rest of the week, dealing with her real life issues at home, which we agree are more important right now than anything else.  Marlena is off.  LaVonte is still out, but he text's T.J. to cover for him, so that's golden.  A busy lunch follows.

Friday.  Mary and Marlena out.  Brian and Angie and LaVonte all show up.  Kevin is again on the line.  A busy lunch follows.  Very busy.  Kevin falls way behind in his prep work.

Saturday.  Mary out.  LaVonte out, again.  We get a new guy to come in for LaVonte.  A not so busy lunch allows Kevin and Angie to get caught up with prep while Brian and Marlena are able to cover the line.  The week is just about over.

Tomorrow morning Kevin will sleep as late as he wants to. He's going to need it, to be rested up for whatever next week might bring.
