Heather and Adam

Meet Heather and Adam, our two day cooks.
We finally got them chef's coats and they are looking very good!

Heather has been at BT since late last summer, coming on board with no cooking experience but the willingness to learn and the desire to succeed. She is the lunch time garde manger - she preps everything for the salad station, from the cucumbers to the shallot vinaigrette. She sets the station up, makes sure there is plenty of lettuce cleaned and cut, dressings made, raisins plumped. She even makes the ice cream sandwiches! During service she plates all the salads and desserts, while continuing to do any prep work necessary for lunch or dinner service. Heather is 2-year old Tyreese's mom, which is probably her most important job, so we are lucky he shares her with us!

Adam is a true story of determination. He started here in October, with very little restaurant experience, and Kevin put him on the lunch line as the griddle cook. For the first three months, at least, it was a struggle, for both Adam and Kevin. Kevin is a tough boss and he has very high expectations of his employees. Adam came to work everyday, followed through on all he was told to do, learning all the while, and never gave up, despite the browbeating he was constantly getting from Kevin. His doggedness earned Kevin's respect and he has become another of our very valuable staff members. His job is to set up his section on the line from which he plates up the hamburgers, Tidewaters, garnishes, anything that comes from the griddle. He also does his share of general prep work, from slicing onions for the onion soup to cutting up chicken for the empanada. He is an 18 year old skate boarder with future.
