Only Seven More Hours...

...and our weekend is here. We were cranking last night, nice and steady without too much delay getting the food out. Smooth. Tonight is the sous-chef Isaac's last night. His replacement started this Tuesday and seems to be enjoying it so far. His name is Kevin... Uh oh. But no, it really hasn't been a problem yet - maybe we say the two Kevin's names with different inflections or something, because I really haven't noticed any confusion. Anyway, Isaac - pronounced "ee-sock" - is moving back to his home town in PA to work at a new restaurant opening up in West Grove. He is an ex W.C. student and really just wants to get out of Chestertown after four or five years here. He's only 24 and "doesn't want to turn 25 here in C'town"(!) . His new job will be at Twelves Grill, where he will be either a sous-chef or a line cook, he's not sure which. He's pretty excited -we're gonna drink some champagne tonight to celebrate his new job. He's been a terrific addition to BT and we wish him well.

Kevin, the new sous-chef, comes to us from the Narrows, where he was their sous-chef a few years back. He is very different from Isaac - older for one thing, although still much younger (of course) than Kevin and me. He seems very focused and steady, with good kitchen habits and plenty of energy. And he certainly knows what life in the kitchen is all about.

Meanwhile, we're getting ready for Saturday night, the last shift of the week. Here's hoping we're hopping!

Black Raspberry pie for dessert tonight. Come and get it!
