Roasted Asparagus


Grab a handful of local asparagus. Toss lightly with olive oil, kosher salt and fresh ground pepper. Roast in a 400 degree oven for about 8 to 10 minutes. Lay a thin slice of country ham over the aspargus, then a slice of homemade mozzerella. Place under the broiler for a minute or two, until the cheese is melted to your liking. Drizzle with a little lemon-garlic vinaigrette. Enjoy!
