A few "somethings" I suppose. I opened the convection oven on the line during service last night to put in a loaf of bread and was struck by all the other things already in there: crabcakes and crabsteaks, haddock and rice cakes, the veal and porkchop. A few of the menu items that get browned on the griddle and finished in the oven. Busy oven, eh?
