A salad special today at lunch was inspired by a conversation Kevin had with two of our guests visiting in the kitchen after their dinner last night. Green beans, roasted yellow peppers, cherry tomatoes, watermelon and feta cheese, all tossed with a light balsamic vinaigrette. Looks pretty nice, eh? The watermelon, peppers and green beans are from Redman's, while our cherry tomato plant at home (a volunteer no less) provided the tomatoes.
