90 Minutes To Go...

...and things seem to be well in hand.  Kevin's prep list is just about entirely crossed out.  The last thing on his agenda is to go over the plating schedule with his crew and the entire menu with mine.

Here are a few final pictures from today's operations:

 Angie poached a few pears for the Pear Frangipane tart.

Here she is putting the final glaze on the warm tarts. 
They came out beautifully.

Next to the tarts are the Pave Josephine -
chocolate pretty much in it's purest form!
