It's That Time of Year

Strawberry ShortCake Time!  and it's the biscuit kind, which is my personal favorite.  Here's the recipe, adapted (aren't they all?) from the Joy of Cooking.

6 cups flour:  sifted
Resift with: 7.5 teaspoons baking powder
                 1 tablespoon salt
                 3 tablespoons sugar
Cut in:       6 ounces chilled butter
Add:          2.25 cups of milk, all at one time
Fold flour and milk together sparingly.
Knead for a half minute until dough is smooth.
Roll  out about an inch thick, cut into rounds or squares.
Bake at 375 degrees for about 15 minutes.
After that, you know what to do.  I like to split the biscuits, spread them with a little soft butter, and heat them up before layering them with the sweetened berries and whipped cream.
