This week's prix-fixe started with this fine version of panzanella salad - only instead of fresh cubes of bread, Kevin used toasted morsels that stayed crunchy yet chewy within the freshly made combination of peppers (Redmans), tomato (Silcox/McKinney), cucumbers (Redmans) and onions (Arnold Farms) tossed with a little olive oil, vinegar and seasoned with salt and pepper. Talk about summer in a bowl.
This was followed by catfish topped with Bob's aforementioned frizzled Chester Sweets and a poblano pepper (Redmans) stuffed with rice. Nice marriage of semi-spicy and savory sweet.
In other news on the produce front, lima beans made their arrival today! Mr. Bill Kelly brought us in a half bushel of just harvested Redmans limas and we will maybe get a quart or two from that? But that is what Limas are all about, and myself, I want some succotash. (why is it called that?)
