Not Your Typical Monday

Kevin is in the kitchen this morning with Dr. Bill Schindler, Associate Professor of Anthropology at Washington College, to hold a class with some of Bill's students.  The subject is the pig pictured below:

Not a very graceful pose, on the cart in our walk-in.  Kevin will be demonstrating to the class how to break down the 200 pound animal, describing the cuts and such as they go.  Eventually the students will be turning the pork into various products - bacon, salami, sausage - that they will be serving at a dinner.  Fun for Kevin, even as it may seem like work.  He doesn't get a lot of opportunity to break down a whole animal, and it is something he really enjoys doing, so he is thrilled to be involved with the project.
