Sausage Factory

Kevin has serious sausage mania going on these days.  Check out this week's production:

These are the Dogs - ready for rolls!  We had one for dinner last night, and "frankly", they really are about the best I've eaten.  He tweaked the recipe a bit from the first one and it was a game changer.  Put one on a Martin's potato roll, spread it with some Guldens mustard and add a generous portion of CowGirl Candy - get it on!

Next there is his batch of chorizo-style sausage, destined for the posole.

Here they are, freshly roasted, ready to eat.  They have some serious umami going on. 

And, in case you were beginning to worry that Brooks has gone to the dogs:

Here's this week Special Burger, draped in stewed onions and peppers, with a healthy dollop of Sauce Bearnaise.  Trust me when I say that no one makes better bearnaise than Chef Kevin.  It's really good.  And try dipping those fries in it...OMG...best burger yet.
