Last night's prix-fixe main course was billed as "lamb shanks", but I think most of our guests were pleasantly surprised to find that Kevin had done all the work for them - taking the meat from the bones and reforming it as cakes, topped with mustard mint breadcrumbs. All of the vegetables, by the way, including the potatoes, are coming from Redman Farms right now. A few things from Joseph and Colchester, but Cathy's are the dominant source. Isn't summer grand?

The First Local Vegetables Arrive
While we've been getting spring mix and Bibb lettuce from Sudlersville's Chesapeake Greenhouse all winter, today marks the arrival of the first spring produce - asparagus from Redman's and from Joseph. Hip Hip Hurrah! are we excited! I haven't seen a blip in our bed, but Cathy says the record high temps of the week have pushed hers way into view.

BTEM

I've been working on getting the BTEM (Brooks Tavern Electronic Message) underway and I suppose I've had moderate success...I know I've reached some members and know I've missed others...including the one I thought I sent myself! So, bear with me, and next week I'll give it another go, once I've done a few more test runs. (Always a good idea, eh?)
Meanwhile, I hope this picture of the Loch Duart salmon with Redman Farms fresh peas, Joseph Towner's spring onions, and garlic scapes (from our Colchester Farm CSA box) inspires you. It's paired with some Marvesta Shrimp and a rice cake, in a white wine butter sauce. Very light but full of summer flavor. That Loch Duart salmon, while maybe not totally politically correct - due to shipping - is raised right and tasty.

Thinking About Vegetables


And speaking of vegetables, and purchasing locally, the turnips and cabbage we've been adding to the plates lately have been fresh from Redman Farms; even some of their wintered over broccoli has been put to good use. Soon we'll be getting asparagus from Godfrey's... We're already seeing some tips in our beds at home, and we've been cutting chives for a week or two now. Things are looking up; if only the sun would start coming out!
