Sous Chef Up-Date

We've had a few applicants for our sous-chef position. One of the first to apply was our dream come true - young, ambitious, experienced, lives in the area, on the move to own their own place someday. We were ready to hire on the spot. However - isn't there always a "however"? - real life interfered and their spouse's career was going out of the area and consequently taking the applicant along. Understandable but regrettable timing for us. We placed an ad in the local paper and have gotten calls from many of the same people we've known and loved in the 20 plus years we've been placing ads; we put an ad on both the Baltimore and Eastern Shore Craig's list and got a few resumes - including several from Russian teenagers looking for summer work and several from people who have someone named "Dick" who needs opportunity - those we quickly deleted. We will narrow our choice down soon and if we end up hiring a line cook that's okay. A strong line cook can grow into a strong sous-chef, given time and experience.

Meanwhile, I have hired a new lunch waiter to replace the "back-to-school" two that are leaving. Justin has given his notice to go work at SubWay; he may be replaced by Kadeem if that works out; Alec is doing fine on the salads; David, the newest prep cook is learning something everyday and was a lifesaver this past weekend with Holly out sick. He and Walter and Kevin were a sight to behold on the line together! We're used to attrition (thank goodness) and sometimes a good housecleaning is refreshing and energizing. We love having these young people around who are interested in the business and can be steered in a positive manner. Nothing is ever perfect of course, but even a blind pig finds an acorn now and then...
